For dinner tonight I pounded four chicken breasts thin. Then, I sautéed some onion and garlic and sundried tomatoes, then stirred a bag of baby spinach in until it wilted. I threw it in a bowl and stirred in some feta. Then I stuffed the chicken breasts, rolled them up, and wrapped them in a piece of bacon, securing them with a toothpick. I’m baking them now at 350 and will let y’all know how it goes!
