I can’t remember who gave me the recipe, but I had to re write it, as the card had seen it’s better days. I made a few adjustments to my liking. I add coconut milk or cream of coconut to the batter, as it’s a pretty thick batter, and it adds some extra coconut flavor. I like the dense texture of this cake together with the creaminess of the cream cheese frosting, and the crunchiness of the toasted coconut. I’m making this for dessert, minus the actual coconut, because my family is weird and likes coconut flavor, but not the actual coconut. I might just skip dinner and eat only cake, because this mother trucker is right up my alley.Â
